Isn't Freeze Dried coffee the same as Instant coffee?

Freeze-Dried Coffee vs. Instant Coffee

Freeze-Dried Coffee (like S.A. Wilson’s Ready Brew) is made using a low-temperature freeze-drying process as low as -40 degree that preserves the coffee’s natural properties. It retains more of the original caffeine and beneficial compounds like palmitic acid, keeping it as close as possible to freshly brewed coffee.

Instant Coffee is typically made using a high-heat spray-drying process, which can degrade the coffee’s natural oils and compounds, often leading to a different composition with lower levels of Caffeine and Palmitic acid.

Why Does It Matter?

Nutrient Retention: Freeze-drying preserves more of the coffee’s caffeine and beneficial compounds, whereas spray-dried instant coffee can lose some of these elements.

Processing Difference: Freeze-drying is a gentler method that locks in more of the original brewed coffee’s characteristics, while instant coffee undergoes more processing.

So while both are convenient and dissolve quickly in hot water, freeze-dried coffee is a higher-quality option that stays truer to the original brewed coffee composition—which is why S.A. Wilson’s Ready Brew is not “instant coffee.”
